Pike-Perch (Sander lucioperca) has slender greenish body, gill-cover without a spine, mouth with several large fangs and many small teeth. Pike-perch is a fish with average commercial weight of 1 kg at length of 35-55 cm and age 5-6 years. Spawning occurs at temperature of about 15-20 ° C during April-June. Pike-perch is found in abundance in Turkey, Russia, Rumania, Denmark, Germany, Estonia and Kazakhstan. It has a small flake and delicate meat texture with a mild, sweet taste. It can be also used in recipes designed for soles. It is appreciated most in the areas of its original range and is farmed in many parts of central and Eastern Europe. The total annual European catch is at least 27,000 tons.
